Food Philosophy

This is a core belief for Fish, as he blurs the lines between medicine and culinary arts. Hailing from a family of chefs, he was always an artist and instigator of innovations. He was trained by renowned chefs and artists, carving a path all his own. Since the start of his own health journey, Fish has been navigating food through the lens of the plant-based, slow food movement. His creations and experiments have been a vehicle for growth-inspiring, intimate experiences.

He has designed a cuisine and ethos that incorporates 3 main pillars of study: Meditation, Expression and Healing; focusing on the relationships that Western cultures have developed with their food. **Meditation** is the act of simply observing the process of food making, cultivating a deeper mindfulness practice. As a way to innovate, **Expression** is the creative outlet to mold and master edible art. And **Healing** is the integrative study of holistic nutrition made simple, accessible and long lasting. Fish teaches a curriculum based on these principles with keen focus on one’s impact on the planet. This is a wide but powerful net cast in a pond of possibilities, capturing a rich, cumulative abundance in the art of cooking.
